500 g organic whole wheat flour
1 tbsp organic sesame seeds
45ml organic extra virgin olive oil
2 tbsp wheat Cereal germ

Sauce ingredients:

75g cubed chopped onions
75g cubed chopped celery stalk
1 clove crushed garlic
225 ml organic tomato puree
170ml organic tomato paste
3 tbsp grated parmesan cheese
1 tbsp fresh basil
2 tsp fresh or dry thyme
1 tsp finely ground sea salt
1 tsp brown sugar
1/2 teaspoon freshly ground black pepper
1 small bay leaf
2 tsp fennel seeds
2 tufts of wheat Cereal germ

Pizza top ingredients:
115g grated organic mozzarella or tongue cheese
55g grated organic white goat cheese
55g grated old cheddar or Gruyere cheese
1 tbsp chopped fresh basil
20g dried tomatoes, diced in cubes
4-5 large chestnut mushrooms, sliced
1 medium sweet red chilli, small chopped
10-12 black olives, seeds removed, broken into small pieces by hand

Preparation :
To make the dough, add the dry yeast into the warm water. After waiting for 5 minutes, add agave nectar and salt and mix. In a separate bowl, mix the flour, wheat flour and sesame seeds. In a large bowl you will use to knead the dough, first pour the liquid mixture, then the olive oil, one cup at a time, gradually adding the floury mixture. If the dough is too sticky, add a little more flour, if it is too dry, a little more water. Continue to knead the dough in your hand until it has the consistency of the play dough. When the dough reaches the desired consistency, put it in a bowl of olive oil and rest in a hot corner for 1 hour. When the dough reaches about twice the volume, take it out of the bowl and knead a little. Then put it back in the bowl again and rest for another hour

You can prepare the pizza sauce until the dough is blistered.Heat the olive oil in a deep ceiling. Add onion, celery stalk and garlic. Roast until the vegetables become soft and transparent. Add tomato puree and tomato paste and mix until smooth. Add the remaining sauce ingredients and cook over low heat for 35-50 minutes. When the sauce is ready, remove the bay leaf inside.
Bring the oven to 230 degrees and heat it. You can prepare 6 small or 2 large pizzas from the dough. To get as many pizzas as you want, cut the pizza dough into equal pieces and roll each piece into a ball. Open each small ball on the floured counter so that the edges are not very smooth, add sauce on each. Add cheese and ingredients to any combination of pizza dough. Cook the pizzas you have prepared on the middle shelf of your oven for 10-15 minutes
