Finely chop the eggplants together with their shells.
Leave in salt water for about 15 minutes to let out the bitter water.Then drain the water.
Finely chop the courgettes. Chop the tomatoes in the same sizes and shapes.
Put all the vegetables in a bowl. Add olive oil, salt and spices.
Grease your cast iron pan. Arrange all vegetables one by one with little space between them.
Drizzle olive oil over them.
Bake in a preheated 190-degree oven for about 25-30 minutes. Remove and serve hot
